Braised Beef in Tomato Sauce (Moschari Kokkinisto)

800 g beef, cut into chunks

2 large onions, finely chopped

3 cloves garlic, minced

4 tbsp olive oil

400 g canned crushed tomatoes

2 tbsp tomato paste

1 cup red wine (preferably dry)

1 tbsp red wine vinegar

1 tsp sugar
-
1 bay leaf
-
1 tsp dried oregano
-
Salt and pepper to taste

Fresh parsley for garnish
Preparation:

Browning the Beef
Heat olive oil in a large pot over medium-high heat. Add the beef chunks and brown them on all sides. Remove and set aside. -
Cooking the Base
In the same pot, add chopped onions and sauté until translucent. Add minced garlic and cook for another minute. -
Adding Liquids and Simmering
Return the beef to the pot. Stir in crushed tomatoes, tomato paste, red wine, and red wine vinegar. Add sugar, bay leaf, oregano, salt, and pepper. Mix well. -
Simmering
Cover and simmer on low heat for about 2 hours, or until the beef is tender and the sauce thickens. Stir occasionally and add water if needed. -
Serving
