Shrimp Spaghetti with Tomato-Ouzo Sauce

One of the most beloved seafood dishes of Greek cuisine. Shrimp spaghetti combines the sweetness of shrimp, the aroma of fresh tomatoes, and the unique finish of ouzo in a plate that smells like the Aegean. Perfect for summer meals with friends, ideally paired with a chilled glass of wine from Aretousa Wines & Spirits.
Ingredients (serves 4):

500g spaghetti or linguine

700g medium-sized shrimp (peeled, heads reserved)

4 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced
-
400g cherry tomatoes or canned tomatoes

1 shot ouzo
-
A pinch of chili flakes

1 tsp sugar
-
Salt & freshly ground pepper

Fresh basil or parsley to serve
Instructions:

Boil the pasta al dente in salted water and reserve 1 cup of the pasta water.

In a large pan, sauté the onion and garlic in olive oil until soft.

Add shrimp heads and sauté for 2–3 minutes to release flavor. Deglaze with ouzo and let the alcohol evaporate.

Add the tomatoes, sugar, chili flakes, salt, and pepper. Simmer for 10 minutes.

Remove the shrimp heads, add the peeled shrimp, and cook for 2–3 minutes until pink.

Add the pasta to the sauce, along with some pasta water if needed, and toss to coat.

Serve garnished with fresh herbs and a drizzle of olive oil.
