Salted Cod with Garlic Dip (Bakaliaros Skordalia) – Traditional Greek Recipe

If you are looking for a traditional Greek dish full of flavor and intensity, then salted cod with garlic dip (bakaliaros skordalia) is the perfect choice. Ingredients for 4 servings
For the salted cod:

800 g salted cod (desalted)

1½ cups all-purpose flour

½ cup cornstarch (for extra crispiness)

1 tsp baking powder

330 ml beer (or sparkling water)

Salt (use sparingly due to the salted cod)

Sunflower oil or olive oil for frying
For the garlic dip (Skordalia):

300 g bread crumb (soaked and well drained)

4–5 garlic cloves (adjust to taste)

150 ml extra virgin olive oil

3 tbsp white vinegar or wine vinegar

Salt

Optional: a little lemon juice for freshness
Preparation
1. Desalting the Cod
Start at least 24 hours ahead by placing the salted cod in a large bowl of water. Change the water every 6–8 hours. Drain and cut into portions.
2. Preparing the Batter
In a bowl, mix the flour, cornstarch, and baking powder. Gradually add the beer while stirring until you get a thick batter. Add a little more liquid if needed.
3. Frying
Heat the oil in a deep pan. Dip the pieces of cod in the batter and fry until evenly golden brown. Place on absorbent paper to drain excess oil.
4. Making the Garlic Dip (Skordalia)
In a blender, blend the garlic with the vinegar and a pinch of salt. Add the bread crumb and gradually pour in the olive oil while continuing to blend until smooth and thick. Add a few drops of lemon juice if desired.
5. Serving
Serve the crispy cod with a generous portion of garlic dip on the side, ideally accompanied by seasonal greens or boiled beets. Don’t forget to pour a glass of Mavropetritis Dry White Wine, which perfectly complements the intensity of the garlic dip and the flavor of the cod.
