Pork Stir-Fry with Aromatic White Wine

If you’re looking for a traditional Greek pork recipe that is easy, quick, and full of flavor, this pork stir-fry with white wine will delight you. It’s perfect for a Sunday family meal but also great for everyday home cooking.

Ingredients for 4 servings:

  • 800g pork neck or shoulder, cut into bite-sized pieces

  • 1 large onion, finely chopped

  • 2 garlic cloves

  • 1 pepper (red or green), sliced (optional)

  • ½ cup extra virgin olive oil

  • 1 glass (150 ml) dry white wine (ideally Mavropetritis or Ampelikos)

  • 1 tsp oregano

  • 1 tsp thyme

  • Juice of ½ lemon

  • Salt & pepper

  • Optional: mustard, a pinch of smoked paprika

Instructions:

  1. In a deep frying pan or pot, sauté the pork in the olive oil over high heat until browned on all sides.

  2. Add the onion and garlic and continue sautéing for 2-3 minutes.

  3. Deglaze with the white wine and let the alcohol evaporate for 1-2 minutes.

  4. Add the herbs, salt, pepper, and if desired, mustard or paprika.

  5. Lower the heat, cover, and simmer for about 30-40 minutes until the meat is tender and the sauce thickens.

  6. Just before finishing, add the lemon juice.

Tips for success:

  • The better quality the wine, the better the flavor of the dish.

  • For bolder flavors, add a little honey mustard or rosemary.

  • The pepper adds color and a more Mediterranean taste.
